Company Overview: Killarney Brewing & Distilling Co. is a leading producer of premium Irish Killarney Whiskey, Killarney Gin and Killarney Beer, in Killarney, Co. Kerry, Ireland and is renowned for its commitment to quality, innovation, and sustainability.
Killarney Brewing & Distilling Co., located in Killarney, Ireland, operating since 2015, is looking for an experienced and passionate commercial brewer with a solid understanding of brewing science, techniques, and industry best practices to join the team at our brewery. We are a dynamic team, working together to produce excellent beers and manage all the functions to ensure a smooth running efficient brewery. Brewing is on a 40hl fully automated brewhouse with occasional use of a 20hl semi-automatic brewhouse.
Responsibilities :
Wort production, fermentation management and clarification through to finished product.
· Monitor brewhouse efficiencies keeping accurate records of brewery activities and stock movements on brewery management software.
· Ensure brewery SOPs are followed in daily operations.
· Weekly yeast management
· Dry hopping into FVs in a safe and sanitary manner.
· Clarification of finished beer using a centrifuge.
CIP of FVs, BBTs, and brewhouse, maintaining CIP and cleaning records. Ensure brewhouse and cellars area is maintained & cleaned to highest standard.
Carry out preventive maintenance
Quality Control:
· Participate in weekly sensory panels.
· Undertake regular QA/QC measurements throughout the brewing process
Procurement: Assist in raw materials acquisition and maintaining inventory.
Participate in and contribute to new product development.
Safety protocols and procedures adherence ensuring a safe working environment for all.
Requirements:
  • Minimum 18 months operational brewing experience in a commercial brewery. A strong understanding of process controls, troubleshooting and process improvement. Packaging operations experience is a plus. Forklift license desirable but not essential.
  • Degree/certification in brewing science, fermentation science. Engineering considered.
  • Right to work in Ireland.
· EU/UK driving licence.
· Able to regularly lift 25kg and stand for extended periods.
· . On occasion work weekends or late nights.
